Ingredients

Dry Ingredients

  • 250 g plain flour A soft, powdery base that provides the perfect structure.
  • 3 tsp baking powder This will give your scones that delightful lift.
  • 1 tsp fine salt Just a hint of salt to enhance the flavors.

Wet Ingredients

  • 50 g vegan butter Rich and creamy, adding moisture to the dough.
  • 50 g wild garlic leaves These fragrant, green leaves offer a burst of flavor.
  • 4 tbsp nutritional yeast Adds a cheesy depth without any dairy.
  • 180 ml soy milk To bind the ingredients together.
  • 10 ml soy milk For a delightful glaze.
  • 2.5 ml maple syrup A touch of sweetness to round out the flavors.
  • 10 ml olive oil Adds richness and moisture.
  • 1 tsp nutritional yeast (optional) For an extra cheesy flavor on top.

Instructions

Preparation

  • Sift the plain flour, baking powder, and salt into a large mixing bowl.
  • Dice your vegan butter or coconut oil into small pieces and add them to the flour mixture.
  • Blend the fat into the flour until there are no substantial chunks left.
  • Shake the bowl to surface any larger lumps of fat and rub them into the flour if found.
  • Chop the wild garlic leaves finely and incorporate them into the flour mix along with the nutritional yeast.

Dough Formation

  • Gradually add the plant milk while using a knife to mix, holding back a small amount to see how the dough comes together.
  • Aim for a scraggly texture without any dry bits, then transfer it to a work surface and avoid over-kneading.
  • Preheat your oven to 220° C / 425° F (or 200° C / 390° F with a fan).
  • On a lightly floured surface, gently roll out the dough to about 2 cm thick.
  • Using a fluted cookie cutter, cut out circles from the dough and place them on a lined baking tray.

Baking

  • Gather any scraps gently to form a ball and cut out more scones.
  • Mix the glaze ingredients and brush the tops lightly.
  • Bake for 14-15 minutes, rotating the tray for even browning toward the end.
  • Allow the scones to cool slightly, then slice and enjoy with a spread of vegan butter.

Notes

For extra flavor, try adding herbs or spices like rosemary or black pepper. Ensure your vegan butter is cold for the best fluffy texture. Can substitute wild garlic with chives or green onions.
