Ingredients

For the Sauce

  • 350 g Roasted Red Pepper These peppers offer a naturally sweet and smoky note.
  • 400 g Can Chopped Tomatoes Serves as the base of the sauce.
  • 3 tbsp Olive Oil Contributes a fruity essence.
  • 3 Cloves Garlic Infuses the sauce with savory depth.
  • 1 Pinch Chilli Adds a touch of heat.
  • 400 g Spaghetti Classic pasta for the dish.
  • 120 g Parmesan Adds a salty, nutty flavor.
  • to taste Salt & Black Pepper Enhances the overall taste.

Instructions

Preparation

  • Grab a blender and drain the roasted red peppers. Add the peppers along with the canned chopped tomatoes, then whizz until you achieve an almost smooth consistency.
  • Place a large frying pan over medium-low heat and pour in the olive oil. Finely chop, crush, or grate your garlic cloves and add them to the pan. Cook the garlic gently until fragrant but not colored (around 2 minutes).
  • Add the pinch of chilli to the pan and cook for an additional 30 seconds.
  • Pour in the blended pepper and tomato mixture, then add a generous pinch of salt. Bring the sauce to a gentle simmer and allow it to cook for about 15 minutes.

Cooking Pasta

  • While the sauce is simmering, bring a large pot of well-salted water to a boil. Add the spaghetti and cook until al dente, following package instructions.

Combining

  • Once cooked, transfer the spaghetti to the pan with the simmering tomato and pepper sauce. Toss everything together, ensuring the pasta is well-coated.
  • Turn off the heat and add about one-third of the grated Parmesan cheese. Mix gently until the cheese melts into the sauce. If too thick, loosen it with a splash of pasta water.
  • Taste the sauce and add additional salt if needed. Plate the pasta into warm bowls and finish with the remaining grated cheese and a sprinkle of black pepper.

Notes

Consider toasting the garlic longer for deeper flavor, or add fresh herbs like basil or oregano for an aromatic finish. For extra spice, increase chili or add red pepper flakes.
