Ingredients

Main Ingredients

  • 1.5 pounds chicken breast Boneless, cooked and shredded
  • 16 ounces spaghetti Broken into 2-inch pieces
  • 21.5 ounces cream of chicken soup 2 10.75-ounce cans condensed soup
  • 10 ounces diced tomatoes & green chilies RoTel for a zesty kick
  • 6 ounces cream cheese For velvety texture
  • 3 cups Cheddar cheese, shredded Divided use; 12 ounces
  • 1/4 cup heavy cream Optional, can use milk
  • 1 cup frozen peppers and onions mixed Or use diced fresh

Instructions

Preparation

  • Cook the chicken breast until fully cooked. Once done, dice or shred it, and set aside to cool.
  • If using fresh onions and peppers, heat a skillet over medium heat with olive oil or butter. Sauté the veggies until soft.
  • In a large pot of boiling salted water, add the broken spaghetti pieces. Cook until tender, about 8-10 minutes, drain well and set aside.

Cheese Mixture

  • In a microwave-safe dish, combine cream of chicken soup, RoTel diced tomatoes and green chilies, and cream cheese. Heat in the microwave, stirring every minute, until smooth and creamy.
  • Stir in 2 cups of shredded cheddar cheese into the creamy mixture. If too thick, add milk or heavy cream to reach desired consistency.

Combine and Bake

  • Add the shredded chicken to the cheese mixture, stirring until well combined. Fold in the cooked spaghetti, sautéed onions, and peppers.
  • Transfer the mixture to a greased 13x9-inch casserole dish. Smooth the top with a spatula.
  • Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top.
  • Cover tightly with plastic wrap and aluminum foil if freezing, or refrigerate for 2 days before baking.
  • Preheat the oven to 350°F and bake for about 20 minutes or until heated through and cheese is bubbly.
  • Allow to stand for 5 minutes before serving.

Notes

For a quicker option, use rotisserie chicken. Adjust spice levels with different varieties of RoTel. Feel free to add veggies like mushrooms or zucchini.
