Ingredients

Main Ingredients

  • 2 large large turkey legs These provide a rich flavor to the dish.
  • 1/3 cup softened ghee (or butter) Ghee adds a nutty flavor; butter works well too.
  • 1 tsp dried thyme Lends an earthy aroma.
  • 1/2 tsp dried sage Adds a warm, slightly peppery flavor.
  • 1/2 tsp dried rosemary Enhances the turkey's natural flavors.
  • 2 cloves garlic (minced) Brings savory richness.
  • 1/2 tsp salt Essential for flavor enhancement.
  • 1/4 tsp pepper Adds a slight kick.
  • 2/3 cup chicken or turkey stock Keeps the turkey legs moist.

Instructions

Preparation

  • Preheat the oven to 350º Fahrenheit (175º Celsius).
  • In a bowl, stir together the softened ghee or butter, dried thyme, sage, rosemary, minced garlic, salt, and pepper until well-combined.
  • Pat the turkey legs dry with a paper towel to achieve a crispy skin.
  • Place the turkey legs in a baking dish and carefully separate the skin from the meat. Rub the herb butter/ghee mixture between the skin and meat, as well as on top.
  • Pour the chicken or turkey stock into the bottom of the baking dish.

Cooking

  • Transfer the baking dish to the preheated oven and roast for about 1 hour and 30 minutes.
  • Check the internal temperature; it should reach 170º Fahrenheit at the thickest part of the leg.
  • Baste the turkey legs with the pan juices every 30-40 minutes.

Notes

For enhanced flavor, marinade the turkey legs overnight. For an extra crispy skin, broil for the last 5-10 minutes of cooking. Fresh herbs elevate the flavor profile.
