Ingredients

For the Broccoli

  • 1 head Broccoli Fresh, bright green broccoli
  • 2 tablespoons Olive Oil Extra virgin olive oil
  • Salt and Pepper To taste

For the Caesar-ish Sauce

  • ⅔ cup Unsweetened Soya Yogurt Creamy base for the sauce
  • 2 tablespoons Nutritional Yeast Provides a cheesy flavor
  • 1 tablespoon Miso Paste Brings savory umami richness
  • 1 tablespoon Dijon Mustard Sharp, tangy note
  • 1 tablespoon Caper Brine Adds tanginess
  • 1 tablespoon Lemon Juice Juicy and bright
  • 1 teaspoon Garlic Powder Mild garlicky flavor
  • ⅓ cup Capers Chopped

For the Smoky Seedy Drizzle

  • ¼ cup Mixed Seeds Blend of sunflower, pumpkin, and sesame
  • 1 tablespoon Toasted Sesame Oil Imparts warm flavor
  • ½ teaspoon Chili Flakes Adds subtle heat
  • ½ teaspoon Smoked Paprika Adds smoky depth

Instructions

Preparation

  • Preheat your oven to 200°C (fan). Cut the broccoli in half lengthwise, and then cut each piece to create four large wedges from each head.

Roasting the Broccoli

  • Arrange the broccoli wedges on a lined baking tray. Drizzle with olive oil and sprinkle with salt and pepper. Roast for about 20 minutes until tender and golden.

Making the Sauce

  • While the broccoli roasts, finely chop ⅔ of the capers. In a bowl, combine chopped capers with soya yogurt, nutritional yeast, miso paste, Dijon mustard, lemon juice, and caper brine. Whisk until smooth.

Preparing the Drizzle

  • In a frying pan, toast mixed seeds over medium heat until golden brown. Add toasted sesame oil and olive oil, and stir in chili flakes and smoked paprika. Cook for another minute, stirring until aromatic.

Assembly

  • Spoon most of the Caesar-ish sauce onto a serving plate. Arrange roasted broccoli on top, drizzle with remaining sauce and smoky seedy drizzle. Garnish with extra capers if desired.

Notes

Let the roasted broccoli rest for a few minutes after roasting for better flavor. Customize the drizzle with other nuts or seeds, and enhance the sauce with vinegar.
