Instructions

Preparation

  • In a large bowl or stand mixer, combine the softened cream cheese and brown sugar. Mix until creamy and smooth, scraping down the bowl to remove lumps.
  • Add the pumpkin puree, egg, cornstarch, vanilla extract, pumpkin spice, and salt into the cheesecake batter. Mix just until smooth, scraping down the bowl once more. Set aside.
  • If desired, set aside about 3 tablespoons of the cheesecake mixture and add green food coloring for a decorative touch. Transfer to a piping bag or a plastic bag with a small corner cut off.
  • Prepare an 8" or 9" square baking pan by lining it with parchment paper. Preheat your oven to 355°F (180°C).
  • Melt the unsalted butter and semisweet chocolate chips in a small saucepan over low heat, stirring constantly until smooth. Set aside.

Brownie Batter Preparation

  • In a separate bowl, whisk the eggs and brown sugar until foamy (about 30 seconds).
  • Add salt, vanilla extract, and espresso powder (if using) and whisk until combined.
  • Pour the warm chocolate mixture into the egg mixture and whisk thoroughly.
  • Sift in flour and cocoa powder and carefully fold the batter together until just combined.
  • Transfer half of the brownie batter into the prepared baking pan and level the top.
  • Spread most of the pumpkin cheesecake batter over the brownie layer, reserving a few tablespoons.
  • Dollop the remaining brownie batter over the cheesecake layer, smoothing it out gently.

Decoration and Baking

  • Dollop the remaining pumpkin cheesecake batter on top and swirl it using a toothpick to create pumpkin shapes.
  • If swirling becomes difficult, warm the pan in the oven for one minute.
  • Pipe decorative vines and stems using the green cheesecake batter prepared earlier.
  • Bake in the preheated oven for 30-35 minutes, or until the center is puffed up. Let cool completely in the pan.
  • For best results, chill in the refrigerator for a few hours before cutting into squares.

Notes

Consider adding a pinch of nutmeg or ginger to the cheesecake layer for extra flavor. For a stronger chocolate flavor, substitute some cocoa powder with dark chocolate. Use high-quality chocolate chips to enhance flavor.
