Ingredients

For the Sauce

  • 5 pieces Tomatoes Juicy and vibrant, these tomatoes will form the base of your rich and aromatic sauce.
  • 2 cloves Garlic With their pungent aroma, the garlic cloves will add depth to the flavor profile.
  • 4 cups Beef Broth or Chicken Broth The broth will enhance the overall taste and create a luscious backdrop for the meatballs.
  • 1/4 cup Vegetable Oil Neutral in flavor but essential for sautéing, it helps to develop the depth of your sauce.
  • 1/4 cup Water This little splash will help blend the salsa smoothly.
  • 1 piece Chipotle Chili Directly from a can, this chipotle will introduce a smoky kick that complements the meat perfectly.

For the Meatballs

  • 1 3/4 lbs Ground Beef The star of the dish, this hearty and tender beef will be the foundation for your meatballs.
  • 3 pieces Hardboiled Eggs Chopped into bite-sized pieces, these creamy centers add an unexpected richness.
  • 1 piece Large Egg Binding everything together, the raw egg enhances the texture of your meatballs.
  • 1/4 cup Breadcrumbs These will help bind the meat mixture and create a satisfying texture.
  • 1/4 cup Cilantro (finely chopped) The bright and herbaceous flavor of cilantro lightens the dish.
  • 1/4 piece White Onion (finely chopped) Adds a fresh crunch to the meatball mixture.
  • 1 tbsp Salt Essential for enhancing the flavor.
  • 1 tsp Black Pepper Adds just the right amount of warmth and spice.

Instructions

Preparation

  • Roast the Vegetables: Heat a frying pan over medium-high heat and add the tomatoes, onions, and garlic. Roast for about 10 minutes, ensuring to turn them so that all sides are evenly charred. Roast the garlic for only two minutes to prevent bitterness. Once the skins on the tomatoes have blistered and blackened, remove them from the heat.
  • Blend the Salsa: Place the roasted veggies into your blender, adding 1/4 cup of water and one chipotle chili. Blend for 30 seconds or until very smooth, ensuring there are no tomato skin pieces left. Important: Cover the blender lid with a kitchen towel and hold it down while blending to avoid splattering hot ingredients.
  • Prepare the Sauce: In a large pot heated over medium-high heat, pour in 1/4 cup of vegetable oil. Once the oil is hot, slowly add the blended salsa. Be careful, as it might splatter. Next, add the beef or chicken broth and stir until it comes to a boil. Lower the heat to medium and simmer, allowing the sauce to darken without reducing too much.
  • Make the Meatballs: Dice the 1/4 onion and finely chop your cilantro. In a large bowl, combine the ground beef, large raw egg, diced onions, breadcrumbs, cilantro, salt, and pepper. Mix well using a wooden spoon or your hands until all ingredients are fully combined.
  • Shape the Meatballs: Take a chunk of the meat mixture and roll it into a ball. Create a small well in the center and add a piece of hardboiled egg. Carefully close the meat around the egg and roll it into a ball shape. Repeat this process until all the ground beef mixture has been formed into meatballs.
  • Cook the Meatballs: Using kitchen tongs, gently place the raw meatballs into the hot salsa. Cook for 20 minutes, turning them halfway through to ensure they are evenly cooked.
  • Serve: Once cooked, transfer your meatballs to a plate, spoon over the salsa, and serve with a side of rice, bread, or warm tortillas.

Notes

For the best flavor, ensure your tomatoes are ripe. Using fresh ingredients will elevate the dish's overall taste. If you prefer a touch more heat, consider adding an additional chipotle chili or some diced jalapeños in the blended salsa. When forming the meatballs, wet your hands with water to prevent sticking.
