Instructions

Preparation

  • Beat the eggs in a bowl. Heat a lightly greased pan over medium heat, pour in the beaten eggs, and cook until set. Once cooked, slice them into thin strips.
  • Cut the cucumber, carrots, pickled radish, and Spam into thin strips. Optionally remove the seeds from the cucumber.
  • Toss the carrot strips with 1 tablespoon of salt and let sit for about 15 minutes. Squeeze out excess moisture and sauté in a pan for around four minutes until tender yet slightly crisp.
  • In the same pan, add vegetable oil and fry the Spam strips for about one minute on each side until golden brown.

Assembly

  • Lay a sheet of seaweed on a bamboo mat. Spread a thin layer of cooked rice onto the seaweed, leaving about 2 centimeters (1 inch) of space at the top.
  • In the center of the rice, arrange the strips of egg, cucumber, carrots, pickled radish, and Spam neatly.
  • Carefully lift the bamboo mat and fold the rice over the ingredients. Press down firmly to secure the filling and roll forward to seal the Kimbap. Use grains of rice as glue if needed.
  • Brush the outside of the Kimbap with sesame oil and sprinkle with sesame seeds before slicing into bite-sized pieces.
