Instructions

Preparation

  • Soak the Buckwheat: Add 1 cup of raw buckwheat groats into a jar or container. Cover it with water, seal with a lid, and let it sit overnight.
  • Thaw the Berries: If using frozen blueberries, take them out of the freezer and allow to thaw.
  • Rinse the Buckwheat: Drain the soaked buckwheat groats using a fine mesh strainer and rinse until the slimy coating is gone.

Cooking

  • Heat the Milks: In a large Dutch oven, combine 1 cup coconut milk and 2 cups almond milk along with 1/4 teaspoon of salt. Heat until it reaches a gentle boil.
  • Add the Buckwheat: Stir in rinsed buckwheat groats, cover the pot, reduce heat, and simmer for about 10 minutes.
  • Finish with Flavor: Uncover and stir in cinnamon, tahini, and maple syrup until well combined. Adjust consistency with more milk if needed.
  • Serve: Ladle porridge into bowls and top with berries, a drizzle of tahini, bee pollen, and more maple syrup if desired.
