Ingredients

Vegetables

  • 3 ears fresh sweet corn (husked) Adds natural sweetness and crunch.
  • 1 large poblano chile pepper Offers a mild spice and smoky depth.
  • 1 medium onion (diced) Provides a flavorful base.

Broth and Dairy

  • 5 cups low-sodium chicken broth Adds savory quality.
  • 2 tablespoons butter Creates creamy richness.
  • 8 ounces Chile Jack cheese (shredded) Melts beautifully for creaminess.

Grains and Seasoning

  • 1 cup Arborio rice Perfect for absorbing flavors.
  • ½ teaspoon salt Essential for flavor enhancement.
  • 1 tablespoon extra virgin olive oil Perfect for grilling.

Instructions

Grilling Vegetables

  • Preheat your grill to medium-high and brush the corn and poblano pepper lightly with olive oil.
  • Grill the corn and poblano over direct medium heat for about 8 to 10 minutes, turning occasionally until the poblano is blackened and blistered.

Prepare Corn and Poblano

  • Remove the grilled vegetables and let them cool. Cover the poblano with plastic wrap to aid in skin removal.
  • Coarsely chop the onion and place in a bowl. Cut the corn off the cob. Once cooled, remove the poblano's skin, seeds, and stem, then dice it.

Cooking the Rice

  • In a large saucepan, heat the chicken broth until simmering and keep warm.
  • In a large skillet, melt the butter over high heat. Sauté diced onion and Arborio rice for 2 to 3 minutes until the rice appears opaque.
  • Add one cup of simmering chicken broth and stir continuously until absorbed. Continue adding broth one cup at a time for about 20-30 minutes until rice is tender and creamy.

Final Mixing

  • Once the rice has reached desired consistency, mix in the grilled corn, diced poblano, and salt. Stir well to combine.
  • Remove from heat and stir in the shredded Chile Jack cheese until melted. Serve immediately.

Notes

For more smokiness, use a broiler. Toast Arborio rice in butter for added flavor. Add more butter or cheese for a creamier texture.
