Instructions

Marinate the Chicken

  • In a large bowl or zip-seal bag, combine the chicken, minced garlic, olive oil, and taco seasoning. Ensure the chicken is evenly coated. Cover and refrigerate to marinate for at least 15-30 minutes, or up to 24 hours.

Cook the Chicken

  • Preheat a grill or pan over medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill or pan-cook the chicken for about 9-10 minutes on each side, or until fully cooked (internal temperature should reach 165°F).

Prepare the Cilantro Sauce

  • In a food processor, combine Greek yogurt, olive oil, minced garlic, lime juice, and salt. Blend for one minute until creamy.

Assemble the Lettuce Wraps

  • Layer the cooked chicken slices onto the Romaine lettuce leaves. Top with diced tomatoes, onions, and avocado. Drizzle with the cilantro sauce or your favorite taco sauce.

Notes

For maximum flavor, marinate the chicken overnight. Include a variety of toppings like shredded cheese, corn, or black olives to customize your wraps. Experiment with different herbs or spices for additional flavor.
