Main Ingredients

  • 4 tablespoons unsalted butter (2 oz) plus more to coat the casserole dish This creamy base forms the heart of the stuffing.
  • 1 small onion, chopped Offers a slightly sweet, aromatic depth.
  • 2 stalks celery, chopped Adds a crisp texture and freshness to the mix.
  • 3 cloves garlic, minced Infuses the stuffing with a delightful, savory fragrance.
  • 2 tablespoons fresh sage, chopped Brings a warm, earthy flavor that perfectly complements the dish.
  • 1 pound day-old white bread (~10 cups, cut into ½ inch cubes) Provides a deliciously soft and chewy contrast to the chestnuts.
  • 2 tablespoons fresh parsley, chopped For a hint of green freshness and brightness.
  • 1 tablespoon fresh thyme, chopped Enhances the overall flavor profile with slightly minty notes.
  • 2 large eggs, beaten Acts as a binder to bring the stuffing together beautifully.
  • 2.5 cups vegetable stock Adds moisture and richness; chicken or turkey stock can be used as well.
  • 1 teaspoon Kosher salt Essential for enhancing the flavors throughout.
  • 1 teaspoon ground black pepper Offers a slight kick and depth.

Instructions

Preparation

  • Preheat your oven to 375 degrees F and coat a 9x13-inch casserole dish with softened butter.
  • Melt the butter in a large skillet over medium-high heat. Carefully add the chopped onion and celery, sautéing for 5-7 minutes until softened and fragrant.
  • Incorporate the minced garlic and sauté for an additional minute, ensuring it doesn’t burn—reduce the heat if necessary.
  • Add the chopped sage and continue to sauté for 1 minute, releasing its beautiful aroma. Remove the skillet from the heat and allow it to cool for 5 minutes.
  • In a large bowl, combine the cubed bread, chopped parsley, and thyme. Toss everything together until well mixed.
  • To the bowl, add the eggs, stock, Kosher salt, pepper, and the sautéed vegetable mixture. Mix gently until just combined; avoid overmixing for a more textured stuffing.
  • Gently fold in the chopped chestnuts, ensuring they’re evenly distributed throughout the mixture.
  • Transfer the stuffing to the prepared baking dish, spreading it evenly and lightly pressing down to compact it.
  • Bake uncovered in the preheated oven for 35-40 minutes, or until the top is lightly browned.
  • Once baked, allow the stuffing to cool briefly before serving alongside your carved turkey.

Notes

Using fresh herbs will elevate the flavor significantly. Experiment with additional herbs like rosemary or oregano. For a crispier top, broil the stuffing for the last 5-10 minutes.
