  • 1 teaspoon sugar Balances savory flavors.
  • 1 cup frozen peas and carrots Adds sweetness and texture.
  • 1 teaspoon rice vinegar Adds a hint of tanginess.
  • 1 teaspoon sesame oil Imparts nuttiness.
  • 1/4 cup chopped cashews or peanuts (optional) For extra crunch.
  • pinch salt Enhances all flavors.
  • 1/4 teaspoon crushed red pepper flakes For a hint of heat.

Instructions

Preparation

  • If using a whole head of cauliflower, grate it in a food processor or by hand and set aside. Skip this step if using ready-to-cook cauliflower rice.
  • In a large nonstick skillet, heat 2 teaspoons of vegetable oil over medium heat. Add the beaten eggs and a pinch of salt, scrambling gently until fully cooked. Transfer to a plate and wipe out the pan.
  • Add 3 tablespoons of vegetable oil to the skillet and heat to medium. Sauté the white parts of the scallions, minced garlic, and chopped ginger for 3 to 4 minutes, stirring frequently.

Cooking

  • Stir in the grated cauliflower, 4 tablespoons of soy sauce, red pepper flakes, sugar, and 1/4 teaspoon of salt. Cook while stirring for about 3 minutes.
  • Add the frozen peas and carrots, stirring until the cauliflower rice is tender-crisp and the vegetables are heated through, about 2-3 minutes.
  • Stir in the rice vinegar, sesame oil, dark green parts of the scallions, nuts (if using), and the scrambled eggs. Adjust seasoning if necessary and serve hot.

Notes

Use fresh garlic and ginger for best flavor. Customize with your choice of vegetables. Great for meal prep.
