Ingredients

Main Ingredients

  • 250 g Biscoff cookies (approximately 1 packet) These cookies are perfectly spiced, offering a sweet and slightly crunchy bite.
  • 250 g cream cheese (softened, approximately 1 block) This adds a creamy depth, balancing the sweetness of the cookies beautifully.
  • 40 g rolled oats These add texture, providing a wholesome touch without overwhelming the flavor.
  • 50 g Biscoff spread This velvety spread brings a luxurious finish to the truffles, enhancing their overall richness.

Instructions

Preparation

  • Add the Biscoff cookies, cream cheese, and rolled oats to a food processor. Pulse until everything is well combined.
  • For a more consistent texture, pulse the cookies first, then add in the remaining ingredients. If you don’t have a food processor, crush the cookies in a Ziplock bag using a rolling pin or a water bottle until fine crumbs form, then combine with cream cheese and oats.

Shaping

  • Scoop and roll the mixture into small balls. If the mixture feels too soft, chill them in the fridge or freezer for about 10-30 minutes to firm up.

Setting

  • Place the balls in the freezer to set for about 20-30 minutes.
  • Melt the Biscoff spread in a microwave-safe bowl for 10-20 seconds until it is pourable and smooth.
  • Drizzle the melted Biscoff spread on top of each truffle. Return to the freezer for 30 minutes to fully set or refrigerate for 4 hours for a softer texture.

Notes

For a chocolatey twist, dip the truffles in melted chocolate instead of drizzling with Biscoff spread. Sprinkle crushed Biscoff cookies on top for extra crunch, or add flaky sea salt before the final set.
