Ingredients

Main Ingredients

  • 1 cup Biscoff Spread Adds deep caramel flavors with a hint of spice.
  • 3 cups Rice Krispies cereal Provides the perfect crunch.
  • ½ gallon vanilla ice cream Forms the heart of the cake.

Instructions

Preparation

  • Chill four 4-inch mini springform pans and a very large mixing bowl in the freezer.
  • In a large saucepan over low heat, combine the Biscoff Spread with the Rice Krispies cereal. Stir until the cereal is completely coated. Remove from heat.
  • Line a sheet pan with parchment or wax paper. Pour the Biscoff-Rice Krispies mixture onto the lined pan and spread evenly. Place in the freezer to set.
  • In the refrigerator, soften the ice cream for about 30-45 minutes. Ensure it's soft enough to mix, but not overly melted.
  • After 30-45 minutes, break the chilled Biscoff cereal mixture into bite-sized pieces. If needed, place back in the freezer until the ice cream is softened.

Mixing and Freezing

  • Mix the softened ice cream with the remaining coated cereal in the chilled mixing bowl. Reserve 1.5 cups of the mixture for topping.
  • Pour the mixture into the chilled springform pans, pressing firmly to eliminate air pockets.
  • Top with the reserved Biscoff-Rice Krispie mixture, cover with plastic wrap, and return to the freezer for at least 4-6 hours or preferably overnight.

Serving

  • About 5 to 10 minutes before serving, take the cake out of the freezer and place it in the refrigerator to soften slightly.
  • Place the cakes on individual dessert plates and carefully release the sides of the springform pans. Serve immediately.

Notes

For a richer taste, consider swirling in some extra Biscoff spread into the ice cream mixture. Ensure the ice cream doesn’t melt too much; otherwise, assembly will be difficult. Enjoy with optional mix-ins like crushed cookies or chopped nuts!
