Salad Ingredients

  • 5 pcs cucumbers Fresh and juicy
  • 3 tsp granulated white sugar Adds sweetness
  • 2 tsp sesame seeds Aromatic and nutty
  • 1 tsp garlic, crushed Adds depth of flavor
  • 2 to 3 tbsp green onion, chopped For mild onion flavor and color
  • 1 ½ tbsp soy sauce Savory umami flavor
  • 3 tsp rice vinegar Bright and tangy
  • 3 tsp Chinese chili oil Adds heat and complexity
  • 1 tsp sesame oil Fragrant and toasted aroma
  • 3 tsp salt Enhances flavor and draws out moisture

Instructions

Preparation

  • Gather all your necessary ingredients on your kitchen counter.
  • In a medium-sized bowl, combine the granulated sugar, sesame seeds, crushed garlic, and chopped green onions.
  • Stir in the soy sauce, rice vinegar, chili oil, and sesame oil. Mix well and set the marinade aside.
  • Trim both ends of each cucumber. Place each cucumber between a pair of chopsticks to prevent cutting all the way through.
  • Make diagonal cuts down the length of each cucumber, then flip it to make perpendicular cuts across.
  • Place the cucumber spirals in a large bowl. Sprinkle them with salt and gently massage the salt into the cucumbers. Allow to sit for 8 to 10 minutes.
  • Rinse the cucumbers with cold water to remove excess salt.
  • Pour the Asian marinade over the cucumbers and mix until well coated.
  • Serve and enjoy your bright and zesty salad!

Notes

For extra flavor, let the salad marinate for up to an hour. Adjust chili oil to your heat preference. Fresh herbs like cilantro or mint can be added for an aromatic twist.
