Ingredients

Main Ingredients

  • 1 cup long grain rice Each grain should be light and fluffy.
  • 2 tablespoons white onion (chopped) Enhances flavor with aromatic sweetness.
  • 2 tablespoons cooking oil Choose a neutral oil for sautéing.
  • 1 cup mixed vegetables (frozen or freshly chopped) Colorful options like carrots, peas, and bell peppers.
  • 2 cups broth (chicken or vegetable) Infuses rice with rich, savory flavor.
  • 1 teaspoon salt Elevates flavors in the dish.

Instructions

Preparation

  • In a saucepan over low-medium heat, add the cooking oil. Once it’s hot, add the long grain rice and chopped onion. Stir constantly for about 3 minutes, allowing the rice to lightly toast without browning.

Cooking

  • Pour in the chicken or vegetable broth, add the mixed vegetables, and sprinkle in the salt. Increase the heat to medium, stirring well to combine. Bring this mixture to a boil and let it bubble until you see the rice peeking through the broth, which should take approximately 3 to 5 minutes.
  • Once boiling, cover the saucepan with a lid and lower the heat to the lowest setting. Set a timer for 20 minutes without lifting the lid to avoid mushy rice.
  • After 20 minutes, turn off the heat and let the rice stand, still covered, for an additional 10 minutes. Fluff the rice with a fork and serve hot.

Notes

For enhanced flavor, consider toasting the rice for a few more minutes before adding the broth. Fresh herbs like cilantro or parsley can be added just before serving.
