Instructions

Preparation

  • Mix the Yamani Spice Mix: In a bowl, combine cumin powder, black pepper powder, coriander powder, cardamom powder, cinnamon powder, clove powder, turmeric powder, and red chili powder. Store in an airtight container for future use.
  • Cook the Lamb: In a large pan on medium-high heat, add the lamb meat along with black peppercorns, green cardamom, cloves, and enough water to fully cover the meat. Cook for about 1 to 1.5 hours until tender.
  • Prepare the Onion: Discard the spices and water from the lamb. In a separate medium pan, melt the ghee over medium heat, add the chopped onion and sauté until translucent and nearly golden.
  • Add the Meat and Potato: Incorporate the cooked lamb into the onion, frying until brown patches appear. Add the cubed potatoes and mix for about one minute, covering for two minutes to allow flavors to meld.
  • Enhance with Garlic and Spices: Add minced garlic, salt, and the remaining Yamani spice mix, stirring to combine. Then add tomato paste and mix until integrated.
  • Cook the Stew: Pour in boiling water and simmer for about 20 minutes on medium heat until potatoes are tender and meat is fully cooked.
  • Serve Your Lamb Stew: Ladle into bowls and enjoy the beautiful combination of flavors and textures.

Notes

Choose tender cuts of lamb like shoulder or leg. Prepare the Yamani spice mix a day in advance to save time. Garnish with fresh herbs before serving.
