  • 1 10.5 oz can cream of mushroom soup Adds creamy richness that binds the ingredients.
  • 1 cup mixed frozen vegetables (corn, carrots, green beans, peas) Introduces sweetness and nutrition.
  • 1/4 cup milk For extra creaminess.
  • 1 cup shredded cheddar cheese Adds a cheesy, gooey element.
  • 32 oz frozen tater tots Crispy topping that adds delightful crunch.
  • 1 tbsp minced garlic Aromatic and flavor-packed.
  • 1 tbsp minced onion Provides a warm, sweet flavor.
  • 1 tbsp Worcestershire sauce (optional) Enhances the umami notes.

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a medium pot, bring 2 cups of water to a boil. Add the green lentils and let them simmer for about 15-20 minutes, or until they start to soften.

Cooking

  • While the lentils are cooking, heat a greased skillet over medium heat. Add the ground beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  • Toss in the minced garlic and minced onion halfway through the cooking time, stirring frequently.
  • Once the lentils are ready, drain any excess water and add them to the skillet with the browned beef. Incorporate the creamy mushroom soup, mixed vegetables, Worcestershire sauce (if using), and milk. Stir until combined and heated through.

Assembly

  • Pour the mixture into a greased 9x9-inch baking pan, spreading it out evenly. Sprinkle shredded cheddar cheese generously over the top.
  • Arrange the tater tots in a single layer on top of the cheese.

Baking

  • Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and continue baking for an additional 10 minutes, or until bubbling and the tater tots are crispy.

Serving

  • Let the casserole sit for a few minutes before serving. Serve warm.

Notes

For added spice, consider using paprika or chili powder, and fresh herbs like parsley or thyme for more flavor.
