Instructions

Preparation

  • Cream together the softened butter and both sugars in a mixing bowl until light and fluffy, about 2-3 minutes.
  • Add the egg and vanilla extract to the creamed mixture and beat until well combined.
  • In a separate bowl, whisk together the plain flour, cornflour, baking powder, and salt.
  • Gradually add the dry mixture to the wet ingredients while mixing on low speed until just combined, avoiding over-mixing.
  • Stir in your preferred mix-ins (chocolate chunks, nuts, or dried fruits) until evenly distributed.
  • Divide the dough in half and roll each half into a log about 20cm long.
  • Wrap each log tightly in plastic wrap and chill in the fridge for at least 2 hours or freeze for about 30 minutes.

Baking

  • Preheat your oven to 180°C (350°F).
  • Remove logs from the fridge, unwrap, and slice each log into 1cm thick rounds.
  • Arrange slices on a lined baking tray, leaving 2-3 cm between each cookie.
  • Bake in the preheated oven for 8-10 minutes or until the edges turn golden brown.
  • Let cookies cool on the tray for 5 minutes before transferring to a cooling rack to cool completely.

Notes

Chilling the dough adequately improves texture. Experiment with flavors by adding different mix-ins. Avoid over-baking to maintain soft cookies.
