Instructions

Preparation

  • Preheat your oven to 350°F (180°C).
  • In a small bowl, combine onion powder, garlic powder, paprika, thyme, salt, and pepper. Rub this mixture generously onto the chicken.

Cooking

  • Heat olive oil over medium heat in a large frying pan. Place chicken skin-side down and cook for about 10 minutes.
  • Turn the chicken over and cook the other side for 2 minutes, then remove it onto a plate.
  • Discard excess fat from the pan but do not wipe it, as it contains flavor.
  • Increase heat to medium-high and sauté the sliced onion and crushed garlic for 2 minutes.
  • Pour in half of the milk and bring to a simmer, scraping the bottom of the pan to incorporate brown bits.
  • Layer half of the sliced potatoes in the pan, followed by salt, black pepper, and half of the parmesan. Repeat with remaining potatoes, salt, and parmesan, and pour over the rest of the milk.
  • Press the potatoes gently into the milk mixture and let simmer for about 10 minutes.
  • Nestle the chicken on top of the potato layer and place the pan in the oven. Bake for 40 to 50 minutes.
  • Allow to rest for 5 minutes before serving.

Notes

For extra flavor, consider marinating the chicken in the rub for a few hours or overnight. Broiling at the end can achieve a crispier chicken skin.
