Ingredients

Dough Ingredients

  • 3.5 cups All-purpose flour Forms the sturdy foundation for the rolls.
  • 1 cup Pumpkin puree Introduces a creamy texture and subtle sweetness.
  • 0.5 cup Warm dairy-free milk Helps bind the ingredients together.
  • 0.5 cup Softened vegan butter For a rich and buttery taste.
  • 2 tablespoons Granulated sugar Sweetens the dough.
  • 2.25 teaspoons Instant dry yeast To ensure the rolls rise perfectly.
  • 1 teaspoon Pumpkin pie spice For delightful autumn flavors.
  • 1 pinch Salt Enhances flavor.
  • 1 tablespoon Maple syrup For a glossy finish.

Instructions

Preparation and Mixing

  • Gather all your dough ingredients, including the yeast.
  • If using a stand mixer, knead the dough for 5-10 minutes until it feels soft and stretchy. For hand mixing, combine ingredients with a large wooden spoon, then knead on a lightly floured surface until smooth.

Rising the Dough

  • Place the kneaded dough into a greased bowl and cover it with a kitchen towel. Allow it to rise in a warm spot for at least 1 hour or until it doubles in size.

Shaping the Rolls

  • Once risen, punch down the dough and divide it into 12 equal pieces (about 75g each). Shape each piece into a round, smooth ball on a lightly floured surface.
  • Grease an 11 x 6 inch baking dish or line it with parchment paper. Arrange the dough balls in the dish, cover with a towel, and let them rest for another hour.

Baking

  • Preheat your oven to 350°F (180°C). Bake the rolls for 22-28 minutes, checking for a golden brown color. If they brown too quickly, tent with aluminum foil.

Finishing Touches

  • Mix a tablespoon of maple syrup and melted vegan butter for a glaze. Brush this on top of the warm rolls and sprinkle with flaked salt or pumpkin seeds.

Serving Suggestions

  • Serve the rolls warm with vegan butter. Store in an airtight container at room temperature for up to three days, or freeze for a month.

Notes

Use bread flour for an even softer texture. You can prepare the dough ahead of time and let it rise overnight in the refrigerator. Add ingredients like nuts or garlic for variations.
