  • 4 tablespoons ghee or cooking oil Used for browning the chicken and sautéing the onions.

Instructions

Preparation

  • Season the chicken pieces with salt, freshly ground black pepper, smoked sweet paprika, Spanish smoked paprika, and garlic powder. Cover and refrigerate for about 30 minutes.
  • In an oven-proof skillet, heat the ghee or cooking oil over medium heat. Add the chicken skin-side down and brown each piece for about 4 minutes on both sides until golden and crispy. Remove the chicken from the skillet and set aside, discarding all but one tablespoon of the oil.
  • Add the chopped onion to the skillet and sauté until translucent, roughly 5 minutes.
  • While the onions are cooking, heat up the chicken stock in a separate pot. Once hot, add the saffron threads and allow to steep. Preheat your oven to 450°F.
  • Once the onions are soft, stir in the chopped garlic and cook for another minute before adding the rinsed rice. Mix everything together until the rice is coated with the oil and fragrant onion mixture.
  • Pour the saffron-infused chicken stock over the rice and mix. Place the browned chicken pieces skin-side up on top of the rice and transfer the skillet to the preheated oven.
  • Bake for 25-30 minutes, until the rice has absorbed all the liquid and the chicken is cooked through.
  • Remove the skillet from the oven and stir in the frozen peas and green olives. Cover and let sit for about 10 minutes.
  • Before serving, sprinkle with freshly chopped parsley and serve warm.

Notes

For deeper flavor, consider marinating the chicken overnight. Substitute saffron with turmeric if needed, and feel free to add other vegetables for additional nutrients.
