Starter Ingredients

  • 25 grams whole wheat flour Brings a nutty flavor and rich texture.
  • 25 grams room temperature filtered water Essential for hydrating and activating the flour.

Instructions

Creating the Starter

  • In a clean 32-ounce glass jar, add 25 grams of whole wheat flour along with 25 grams of room temperature filtered water.
  • Stir the mixture until there are no dry pieces of flour left, scraping down the sides of the jar.
  • Loosely cover the jar and place it in a warm area to rise for 24 hours.

Daily Feedings

  • Each day, at the same time, feed your starter with another 25 grams of whole wheat flour and 25 grams of room temperature filtered water.
  • Mix thoroughly and scrape the sides down as needed.
  • Cover the jar loosely again and store it in the same warm spot.
  • Continue this daily feeding process.
  • On day six, use a rubber band to mark your jar where the last feeding occurred.
  • By day seven or eight, your starter should be doubling in size within about 12 hours after feeding, indicating it is ready to bake with.

Notes

Keep your starter in a consistent warm spot, ideally between 75-85°F (24-29°C). You can experiment with different flours for unique flavors and adjust water for desired consistency.
