Preparation

  • Sprinkle the black pepper over the beef tips and set them aside.
  • In a large bowl, combine the beef broth and the brown gravy packets, whisking them together until well-mixed.

Cooking

  • Set your Instant Pot to sauté mode and add the oil. Once hot, add the beef tips and sauté until browned on all sides (3-5 minutes).
  • Add the chopped onion to the pot and sauté for an additional 3-4 minutes. Add the minced garlic and sauté for another 30 seconds.
  • Pour the Worcestershire sauce and onion soup mix over the beef. Then, pour in the prepared gravy and beef broth mixture.
  • Spread the sliced mushrooms over the beef tips, then evenly spread the cream of mushroom soup on top.
  • Seal the Instant Pot and select the Manual (or Pressure Cook) button. Set the timer for 25 minutes.
  • Allow approximately 10 minutes for the pot to come to pressure before the timer starts.
  • After cooking, let the Instant Pot sit for a 20-minute natural release.
  • Stir the beef tips and gravy. If you like it thick, serve it now. For a thicker gravy, make a slurry.
  • In a small bowl, combine cornstarch with 2 tablespoons of gravy until smooth. Gradually stir this back into the pot.
  • Let the beef tips rest for about 5 minutes for gravy to thicken.
  • Serve the beef tips over mashed potatoes or egg noodles with buttered rolls.

Notes

Browning the beef enhances flavor. Adjust gravy flavor as needed, add vegetables for nutrition, and prepare ahead for quicker cooking.
