Ingredients

For the chicken

  • 2 large chicken breasts (cut in half lengthways) These juicy breasts will be the star of the dish, offering a satisfying protein base.
  • 1/2 tsp onion salt This adds a subtle depth to the flavor profile.
  • Black pepper to taste A touch of seasoning that elevates the dish.
  • 1 tbsp olive oil For searing the chicken and adding a hint of richness.

For the sauce

  • 2 tsp cornstarch This will help thicken the creamy sauce.
  • 1/2 cup chicken stock A savory broth that infuses delicious flavors.
  • 2 tbsp Dijon mustard Provides a tangy kick that pairs wonderfully with honey.
  • 1 tbsp honey Adds a natural sweetness to balance the tanginess of mustard.
  • 1/2 cup milk Contributes creaminess to the sauce while keeping it light.
  • 1/2 cup heavy cream Enhances the richness, giving you that silky-smooth texture.

For the vegetables

  • 1 head broccoli (chopped) Adds a nutritious and colorful touch to the plate.
  • Chopped fresh parsley for garnishing (optional) A sprinkle adds a fresh, aromatic finish to your dish.

Instructions

Preparation

  • Sprinkle the chicken breasts with onion salt and black pepper, coating both sides evenly.

Cooking the Chicken

  • Heat the olive oil in a large frying pan over medium heat. Add the chicken breasts and sear for approximately 3 minutes on each side, or until golden brown. Remove the chicken from the pan and set aside.

Making the Sauce

  • In the same frying pan, mix the cornstarch with a few tablespoons of the chicken stock until smooth. Gradually add the remaining chicken stock while whisking.
  • Bring the mixture to medium heat. Whisk in the Dijon mustard and honey until well combined.
  • Once the sauce begins to bubble, stir in the milk and heavy cream. Allow it to return to a boil and season with additional salt and pepper to taste.

Cooking Everything Together

  • Return the seared chicken breasts to the pan and add the chopped broccoli. Cover and reduce the heat to a simmer, cooking for an additional 10 minutes or until the chicken is cooked through and the broccoli is tender.

Finishing Touch

  • Garnish your dish with chopped fresh parsley before serving, if desired.

Notes

For extra flavor, consider marinating the chicken breasts in Dijon mustard, honey, and a splash of lemon juice for 30 minutes before cooking. For a spicier kick, add a dash of cayenne pepper to the sauce. Using fresh, seasonal broccoli can enhance the dish's taste and nutritional value.
