  • 1 large carrot Peeled and diced into ¼-inch pieces for a sweet crunch.
  • 5 pieces scallions Divided into light and dark green parts for freshness.
  • 1 large clove garlic Minced for aromatic depth.
  • ¼ teaspoon freshly ground black pepper A subtle kick that pairs wonderfully.
  • ½ cup frozen peas Thawed to add sweetness and color.
  • 1½ tablespoons soy sauce Adds a salty umami flavor that ties everything together.
  • ¾ teaspoon sesame oil A finishing touch for a nutty aroma.

Instructions

Preparation

  • Begin by beating the eggs in a small bowl with ⅛ teaspoon of the salt until well combined.
  • Line a baking sheet with aluminum foil, spread the cooked jasmine rice onto the sheet, and let it dry out for at least 30 minutes.
  • Heat 2 teaspoons of vegetable oil in a wok or skillet over medium-high heat until hot. Add the beaten eggs and cook until scrambled (about 30 to 60 seconds). Transfer to a plate.
  • In the same skillet, add another 2 teaspoons of vegetable oil, sauté the diced carrot and remaining ⅛ teaspoon of salt for about 4 to 5 minutes until softened. Transfer to the plate with the eggs.
  • Add the light green parts of the scallions and 1 tablespoon of vegetable oil to the skillet, stirring until fragrant (about 30 seconds). Then add minced garlic and cook for an additional 30 seconds.

Cooking

  • Add the cooked jasmine rice into the skillet, stirring to combine and spreading it into an even layer.
  • Sprinkle the black pepper and remaining ½ teaspoon salt over the rice, cooking while stirring frequently to heat through (about 3 to 5 minutes).
  • Finally, stir in the peas, scrambled eggs, cooked carrots, dark green scallions, soy sauce, and sesame oil. Mix until the peas are warmed through (about 2 minutes).

Notes
