Instructions

Preparation

  • Boil the Eggs: Place the eggs in a medium saucepan and fill it with enough water to cover the eggs by about an inch. Bring to a vigorous boil over high heat. Once boiling, remove the pan from heat, cover it, and let it sit for 10 minutes.
  • Cool the Eggs: After 10 minutes, transfer the hard-boiled eggs into a bowl filled with cold water to stop cooking and make peeling easier.
  • Peel the Eggs: Gently tap each egg on the counter to crack the shell and peel them under cold running water.
  • Prepare the Filling: Slice the eggs in half lengthwise, remove the yolks, and place them in a small bowl while arranging the egg whites on a serving platter.
  • Mix the Filling: Push the egg yolks through a mesh sieve into the bowl and mash them with the mayonnaise, cider vinegar, mustard, Worcestershire sauce, salt, pepper, sugar, cayenne, and mixed herbs.
  • Fill the Egg Whites: Transfer the yolk mixture into a piping bag or sealable plastic bag and pipe or spoon it into each egg white half.
  • Garnish and Serve: Sprinkle with paprika and extra fresh herbs and serve chilled.

Notes

Ensure your eggs are a few days old for easier peeling. For an extra zing, try adding hot sauce to the filling mixture. Store leftovers in an airtight container for up to two days.
