Ingredients

For the Chicken

  • 2-3 pieces medium boneless, skinless chicken breasts juicy and tender
  • 1 tablespoon avocado oil offering a light and healthy cooking oil
  • 1/2 cup chicken broth providing depth to the sauce

For the Spice Blend

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

For the Sauce

  • 4 tablespoons butter which adds a rich creaminess
  • 1 cup heavy cream delivering a luxurious and creamy texture
  • 1 tablespoon balsamic vinegar giving a hint of tanginess
  • 1/2 teaspoon honey for natural sweetness (or sugar)
  • 1/4 cup freshly grated parmesan cheese optional, adds a salty kick

For the Onions

  • 1 cup finely chopped or sliced onions sweet and caramelizing beautifully

Instructions

Preparation

  • Begin by slicing the chicken breasts in half horizontally to make them thinner.
  • In a small bowl, whisk together the garlic powder, paprika, oregano, salt, and pepper.
  • Rub this spice blend on both sides of the chicken breasts.

Cooking

  • Heat the avocado oil in a large skillet over medium-high heat.
  • Add the seasoned chicken to the skillet and cook for about 4-5 minutes per side, or until fully cooked through.
  • Transfer the chicken to a plate and set it aside to rest.
  • In the same skillet, reduce the heat to medium and add the butter and chopped onions.
  • Cook down the onions for 10-15 minutes, stirring occasionally, until they are soft and beautifully golden brown.
  • Stir in the balsamic vinegar and honey, continuing to sauté for an additional 1-2 minutes.
  • Increase the heat to high and whisk in the chicken broth and bring to a boil.
  • Reduce the heat to low and pour in the heavy cream, gently simmer for 1-2 minutes, or until the sauce has thickened slightly.
  • Stir in the optional parmesan cheese until melted and well incorporated.
  • Return the cooked chicken to the pan, spooning some of the rich sauce on top of the pieces.

Serving

  • Serve the Creamy Caramelized Onion Chicken hot, paired beautifully with rice, pasta, mashed potatoes, or steamed vegetables.

Notes

For extra flavor, consider marinating the chicken in the spice blend mixed with a bit of olive oil for at least an hour before cooking. You can substitute half of the heavy cream with low-fat milk or Greek yogurt for a lighter sauce.
