Instructions

Make the Chickpea Salad

  • In a food processor, combine the chickpeas, tahini, Dijon mustard, garlic, capers, green onions, cilantro, lemon juice, and a pinch of salt and pepper. Pulse until thoroughly combined, avoiding pureeing completely for texture. Taste and adjust seasoning as needed.

Blanch the Green Beans

  • Prepare a small pot of salted water and bring it to a boil while having a bowl of ice water ready. Once boiling, drop in the green beans and cook for approximately 1½ minutes. Transfer to the ice water immediately to halt cooking. Once cooled, drain, pat dry, and chop into 1-inch pieces.

Assemble the Sandwiches

  • Take one half of the baguette and generously spread the chickpea salad on it. Fold in the chopped green beans, followed by the halved olives and slices of red onion.
  • On the opposite half of the baguette, spread a layer of mayo and pile on the slices of cucumber, radish, and basil. Season with sea salt and freshly ground black pepper to taste.
  • Press both halves together, slice, and enjoy your creation!

Notes

For added flavor, consider roasting your chickpeas before making the salad. You may also experiment with various herbs like dill or parsley. For a spicy kick, consider adding red pepper flakes or jalapeños. Store leftover chickpea salad in an airtight container in the refrigerator for up to three days, or freeze for up to a month.
