Instructions

Preparation

  • Once boiling, add the rice and reduce to a simmer. Cover the pot and cook for about 18 minutes or until tender and water is absorbed.
  • Remove from heat and let sit covered for 5 minutes before fluffing with a fork.
  • While the rice is cooking, preheat your oven to 350°F (175°C).

Mix Ingredients

  • In a large mixing bowl, combine the shredded chicken with the enchilada sauce, refried beans, corn, and half of the Monterey Jack and white cheddar cheese.
  • Add the cooked rice, season with salt and freshly ground pepper, and mix thoroughly until well combined.

Bake

  • Pour the rice mixture into a 9×13-inch casserole dish, spreading it evenly.
  • Top with the remaining cheese.
  • Place the casserole in the preheated oven and bake for about 20 to 30 minutes, until cheese is melted and bubbly.

Serve

  • Once baked, let the casserole cool slightly, then garnish with chopped cilantro before serving.

Notes

For added flavors, consider using spices like cumin or chili powder. Saute onions and bell peppers for texture and sweetness, or use spicy enchilada sauce to spice it up.
