For the Burritos

  • ¼ teaspoon smoked paprika Adds a subtle smokiness.
  • ½ lb spicy sausage Such as chorizo or Italian, savory and robust.
  • 1⅓ cups shredded Monterey Jack cheese Melty and gooey, complementing each bite.
  • 4 10-inch burrito-size flour tortillas Soft and pillowy for wrapping.
  • Vegetable oil For a golden and crispy exterior.

Instructions

Preparation

  • In a medium bowl, combine the diced avocado, tomatoes, minced shallot, garlic, jalapeño, lime juice, salt, cumin, and cilantro. Mix gently until well combined and set aside.
  • In another medium bowl, whisk together the eggs with smoked paprika and salt until well blended.

Cooking

  • Heat a large nonstick pan over medium-high heat. Add the spicy sausage and cook for about 4 to 5 minutes, stirring frequently until browned. Transfer the sausage to a plate, leaving the drippings.
  • In the same pan, add the whisked eggs and scramble until just cooked through. Transfer them to a plate and clean the pan.

Assembly

  • On each tortilla, place about ¼ cup of the avocado-salsa mixture, followed by a portion of sausage, scrambled eggs, and a sprinkle of cheese.
  • Fold in the sides of the tortilla and roll it up, tucking in the edges as you go.

Cooking the Burritos

  • Lightly coat the pan with vegetable oil and set it over medium heat. When hot, add the burritos seam side down. Cover and cook until the bottoms are golden brown, about 3 minutes.
  • Flip the burritos and cook covered for a few more minutes until golden on all sides. Serve warm.
