Ingredients

Dough Ingredients

  • 2 cups whole wheat flour Provides a nutty base.
  • 1 to 2 teaspoons oil or ghee Adds richness; use more for frying.
  • as required salt For balancing taste.
  • as required water For kneading the dough.
  • 1 tablespoon ajwain (carom seeds) Provides strong aroma and digestive benefits.
  • as required extra oil or ghee For roasting for crispy texture.
  • as required additional salt As finishing touch.

Instructions

Preparation

  • Mix the salt thoroughly with the whole wheat flour in a large mixing bowl.
  • Add the oil or ghee into the flour mixture, and gradually pour in water. Combine until a smooth and soft dough forms.
  • Cover the dough with a cloth or plastic wrap and let it rest for 20 to 30 minutes.

Shaping and Cooking

  • Take a medium-sized ball of dough and roll it into a round shape, about 4 inches in diameter.
  • Brush a small amount of oil or ghee on the surface of the rolled dough.
  • Sprinkle approximately ¼ teaspoon of ajwain seeds and 1 to 2 pinches of salt over the dough.
  • Fold the dough over itself and roll into a paratha of approximately 6 to 7 inches in diameter.
  • Heat a tawa over medium-high heat. Place the rolled paratha on the hot tawa and fry with a teaspoon of oil or ghee.
  • Cook on both sides until well browned, flipping a couple of times.
  • Press any uncooked edges gently with a spatula to cook through.
  • Repeat these steps for all dough balls.
  • Serve Ajwain Parathas hot or warm.

Notes

For extra fluffiness, knead the dough well and rest longer. Using ghee enhances flavor and richness. Sprinkle some ajwain on top while roasting for extra flavor.
